Ingredients for making chutney:

Green coriander, salt, mint leaves, green chilli, whole red chilli, fennel, red chilli powder, red chilli, whole coriander, dry mango powder, asafoetida, ginger

Ingredients for filling:

Oil 2 teaspoons, cumin half teaspoon, fennel half teaspoon, asafoetida, ginger, green chilli, turmeric powder half teaspoon, red chilli half teaspoon, coriander powder half teaspoon, dry mango powder – 1 teaspoon, black salt, roasted cumin powder half teaspoon, gram flour. 2 tbsp, salt, green coriander finely chopped, half cup peas

Ingredients for dough:

Flour – 1 cup, gram flour – half cup, water – half cup, salt, red chilli powder, turmeric powder, celery, oil

Chutney Recipe:

First of all, to make green coriander and mint chutney, take coriander leaves, mint and 2 green chillies. Now grind them on a sealed grater. The taste of seal batta chutney is amazing. You can also use a mixer instead. To add flavor to the chutney, add a little fennel, half teaspoon red chili powder, half teaspoon dried coriander, a little asafoetida, garlic and ginger and grind well. Spicy chutney is ready.

Recipe to make Matar Kachori:

  • First step: First of all, put oil in a pan and temper it with cumin, fennel, asafoetida and green chillies. Then add turmeric powder, red chilli, coriander powder, dry mango powder, black salt, roasted cumin powder and gram flour. Fry them for 2-3 minutes. After that add boiled peas and salt and mix well and cook for a few minutes. Once cooked, leave the filling to cool. After it cools down, make balls of the filling.

  • Second step: Now, take a bowl to knead the dough, add flour, gram flour, salt, red chilli powder, turmeric powder, carom seeds. Knead a soft dough with lukewarm water. Cover it and keep it for 5-7 minutes.

  • Third step: Now take a big ball of dough, add filling to it and make shortbread. Turn on the gas and fry it on medium flame. Crispy kachori with green chutney is ready to serve.
