Raw turmeric 250 grams, Ghee 4-5 tbsp, Green peas 1 cup, Curd 1 cup, Gram flour 2 tbsp, Ginger 1 tsp, Green chilli 2-3, Asafoetida 1 pinch, Cumin 1 tsp, Coriander powder 1 tsp, Red Chilli powder half spoon, garam masala 1/2 spoon, salt as per taste, chopped coriander
Method of making raw turmeric curry:
-
first step: First of all, wash, peel the raw turmeric and grate it. (If turmeric is too bitter then you can boil it in lukewarm water for 5-10 minutes) Now turn on the gas and heat ghee in the pan, add asafoetida and cumin seeds. After the cumin seeds crackle, add finely chopped green chillies and grated ginger.
-
second step: When it becomes light golden, add grated turmeric to it and fry it until its rawness goes away, hence fry on medium flame. Gradually the color of the turmeric will change and the aroma will start coming out. Now fry peas in a pan. And then add peas and gram flour and fry for some time.
-
third step: Now add whipped curd to the raw turmeric mixture and keep stirring continuously so that the curd does not curdle. After that add coriander powder, red chilli powder, garam masala and salt. Let it cook on low flame. When turmeric, peas, and spices are cooked well and light oil starts appearing on top of the vegetable, turn off the gas.
