Kadhi rice has great importance in Govardhan Puja. This puja is considered incomplete without this recipe. People prepare Kadhi and offer it to Lord Krishna. As food is offered to God, onion and garlic are not used in the curry. Also, Kadhi rice is such a combination that hardly anyone will like its taste. Be it summer, winter or rainy season, Kadhi rice tastes amazing. So let us tell you how to make this recipe without onion and garlic?
Ingredients for Kadhi Batter:
1.5 cup curd, 1/4 cup gram flour, 1 tsp salt, 1/4 tsp turmeric. 1/2 tsp red chilli powder, 3 cups water (mix everything and make a smooth batter)
Ingredients for Kadhi Tadka:
1 tbsp oil, 1/2 tsp mustard, 1/2 tsp cumin, 1/4 tsp fenugreek seeds, 1/2 tsp fennel, 2 green chillies, cut into two parts, 2 cloves, 2 bay leaves , 1/4 tsp asafoetida, 10-12 curry leaves
Method to make Boondi Kadhi:
To make Boondi Kadhi, first mix 1/4 cup gram flour in 1.5 cups curd. Heat oil in a pan and add mustard, cloves, fenugreek seeds, cumin, green chilli, asafoetida, curry leaves, red chilli powder and turmeric powder and fry for 20-25 seconds. After that add curd-gram flour solution and cook it well while stirring continuously. Cook the mixture while stirring continuously until it boils. Reduce the flame to medium low and cook the mixture for 25-30 minutes. Keep stirring in between. Then add coriander powder, salt and garam masala. Now add 1 cup dry boondi, 1 teaspoon Kasuri methi and mix. Now heat 1-2 tbsp ghee in a pan and add 2 dried red chillies and 1 tsp Kashmiri red chilli powder to add the finishing touch. Garnish with some coriander leaves and serve with rice.
